1 cup cooked rice (Keshar Mahak or Keshar Kali)
2 medium tomatoes (finely chopped)
1 small onion (finely chopped)
1 tbsp oil or ghee
½ tsp mustard seeds
1 tsp cumin seeds
1-2 green chilies (slit lengthwise)
1 sprig curry leaves
1 tsp ginger-garlic paste
½ tsp turmeric powder
1 tsp red chili powder
½ tsp garam masala (optional)
Salt to taste
1 tbsp chopped coriander leaves (for garnish)
Steps to Prepare Curd Rice
1. Cook the Rice
2. Prepare the Base
a. Heat oil or ghee in a pan over medium heat.
b. Add mustard seeds and cumin seeds. Let them splutter.
c. Toss in the green chilies and curry leaves. Sauté for a few seconds.
3. Sauté Vegetables
a. Add chopped onions and sauté until they turn golden brown.
b. Stir in the ginger-garlic paste and cook until the raw aroma fades.
c. Add the chopped tomatoes, turmeric powder, red chili powder, and salt. Cook until the tomatoes soften and the oil separates.
4. Combine with Rice
a. Add the cooked rice to the tomato mixture and mix gently until well combined.
b. Optionally, sprinkle garam masala for added aroma and flavor.
5. Garnish and Serve
a. Turn off the heat and garnish with fresh coriander leaves.
b.Serve hot with raita, papad, or pickle for a complete meal.
