  • 1/2 teaspoon turmeric powder
  • Salt to taste
  • 2 cups water
  • Garnish of fresh coriander or spring onion greens

Preparation Methods of Tofu Rice Bowl

Tofu rice can be prepared in three ways:
  • In a pan on the stove (for crispy tofu)
  • In a pressure cooker (one-pot style)
  • In an instant pot (one-pot style)
The explanations of all these are given below along with the ingredients needed.

In the Pan on the Stove

Preparation
Rinse 1 cup of Keshar Kali rice until the water becomes clear. Pre-soak the rice in water for 15-20 minutes, drain and store. Press the tofu with a heavy object for 10 minutes to remove excess water, then cube it into small pieces.
Cook Tofu Rice
  1. Put a pan on a medium burner and pour in 1 Tbsp of oil. Add the tofu cubes and fry them for 4-5 minutes until they are golden and slightly crisp on the edges. Remove and set aside.
  2. In the same pan, add the remaining oil. Add cumin seeds and mustard seeds (or sesame seeds) after it becomes warm.
  3. Add onions and fry them until they are a golden brown. Add ginger and garlic and cook for 30 seconds until fragrant.
  4. Add turmeric powder and your choice of soy sauce or garam masala. Blend thoroughly to allow the flavors to combine.
  5. Pour in the soaked rice and stir gently to coat the grains. Pour in 2 cups of water and add salt. Bring to a boil.
  6. Cover and cook on medium-low heat for 10-12 minutes until the rice is soft.
  7. Switch off the stove, add the crispy tofu back into the pan, and let it rest for 3-4 minutes.
  8. Open the lid, fluff with a fork, and garnish with coriander and lemon juice.
Pressure Cooker Method
  1. Rinse 1 cup of rice and soak for 20 minutes. Drain.
  2. Heat oil in a pressure cooker and sauté the tofu cubes until golden. Remove half the tofu for garnish if you prefer crunch.
  3. Add cumin seeds, curry leaves, onions, ginger, and garlic to the remaining oil and sauté until soft.
  4. Add the turmeric, salt, and soaked rice. Mix gently so the spices coat the rice.
  5. Add 2 cups of water and seal the lid. Cook over medium heat for 2 whistles.
  6. Once the pressure releases naturally, open the lid and fluff the rice. Top with the remaining tofu and coriander. Served hot with a side salad or curd.
In an Instant Pot
  1. Turn on the Saute mode in the instant pot and warm the oil.
  2. Saute the tofu until browned, then add cumin, onions, ginger, garlic, and turmeric. Stir well.
  3. Add the soaked rice, salt, and 1.5 to 2 cups of water.
  4. Close the lid and set to Pressure Cook mode for 5 minutes.
  5. After the timer finishes, let the natural pressure release for 5 minutes, then manually release the rest.
  6. Use a fork to fluff the rice, garnish with spring onions or coriander, and serve warm.
