Soya Chunk Pulao Ingredients

The following are the ingredients required to prepare soya chunk pulao:
  • 1 cup rice (Keshar Kali Wada Kolam or any preferred variety) 
  • 1 cup soya chunks 
  • 2 tablespoons ghee or oil 
  • 1 bay leaf 
  • 2–3 cloves 
  • 1-inch cinnamon stick 
  • 2 green cardamoms 
  • 1 teaspoon cumin seeds 
  • 1 medium onion, thinly sliced 
  • 1 medium tomato, finely chopped 
  • 1 teaspoon ginger-garlic paste 
  • 1 green chilli, slit 
  • 1/2 teaspoon turmeric powder 
  • 1 teaspoon red chilli powder 
  • 1 teaspoon garam masala 
  • 1 teaspoon coriander powder 
  • Salt to taste 
  • 1.75 cups water 
  • Fresh coriander leaves for garnish 
  • Lemon juice (optional) 
  • Fried onions for topping (optional)

In the Pan on the Stove

Preparation
Rinse 1 cup of Keshar Kali rice thoroughly under running water until the water turns clear. Soak the rice in fresh water for about 20 minutes, then drain and set it aside. Bring a small pot of water to boil and drop the soya chunks in. Let them soak in hot water for 8–10 minutes until they soften and expand. Drain the water and gently squeeze out the excess moisture from each soya chunk. Set them aside. Slice the onion finely, chop the tomato, and keep the ginger-garlic paste ready before you begin cooking.
Cook Soya Chunk Pulao

Place a wide, heavy-bottomed pan on medium flame and add ghee or oil. Once the ghee melts and turns warm, add the bay leaf, cloves, cinnamon stick, and green cardamoms. Let the whole spices splutter for a few seconds and release their aroma.

Add cumin seeds and let them crackle. Then add the sliced onions and green chilli. Fry the onions on medium heat, stirring continuously, until they turn golden brown. This step is important as it builds the base flavour of the pulao.

Add ginger-garlic paste and sauté for about 30–40 seconds until the raw smell disappears. Add the chopped tomatoes and cook until they turn soft and mushy. Now add turmeric powder, red chilli powder, coriander powder, and salt. Mix everything well and cook the masala for 1–2 minutes until oil begins to separate from the sides.

Add the squeezed soya chunks and stir them into the masala. Cook for 2–3 minutes so that the soya chunks absorb all the flavours of the spices and masala properly.

Add the soaked and drained rice to the pan and mix gently so that every grain gets coated with the spiced masala. Be careful not to break the rice while stirring.

Pour 1.75 cups of water and check the salt. Stir once, bring the mixture to a boil, then reduce the flame to low. Cover the pan with a tight lid and cook for 12–14 minutes until the rice is fully cooked and all the water has been absorbed.

Switch off the flame and let the pulao rest with the lid on for 4–5 minutes. Open the lid and fluff the rice gently using a fork. Sprinkle garam masala and squeeze a little lemon juice on top. Garnish with fresh coriander leaves and fried onions if you like. Your soya chunk pulao is ready to serve warm with curd, raita, or pickle.

Pressure Cooker Method

Rinse and soak 1 cup of Keshar Kali rice for 20 minutes, then drain. Soak the soya chunks in hot water, squeeze out the water, and set aside.

Heat ghee or oil in a pressure cooker on medium flame. Add the whole spices — bay leaf, cloves, cinnamon, and cardamom — and let them splutter. Add cumin seeds, then the sliced onions and green chilli. Fry until the onions turn golden brown.

Add ginger-garlic paste and sauté for 30 seconds. Add chopped tomatoes and cook until soft. Mix in turmeric powder, red chilli powder, coriander powder, and salt. Add the soya chunks and cook for 2 minutes.

Add the soaked rice and stir gently to coat with masala. Pour 1.75 cups of water and mix well. Close the lid of the pressure cooker and cook on medium flame until 2 whistles blow.

Switch off the flame and let the pressure release naturally. Open the lid, sprinkle garam masala, and fluff the rice carefully with a fork. Garnish with coriander leaves and serve hot with raita or curd.

In an Instant Pot

Rinse and soak the rice for 20 minutes and drain. Prepare the soya chunks by soaking them in hot water, squeezing out the moisture, and keeping them ready.

Turn on the sauté mode on your instant pot and add ghee or oil. Once warm, add the whole spices and cumin seeds. Add sliced onions and green chilli and sauté until golden brown.

Add ginger-garlic paste, tomatoes, and dry spice powders one after the other and cook until the masala is ready. Add the soya chunks and sauté for 2 minutes.

Add the drained rice and mix gently. Pour 1.75 cups of water and add salt to taste. Close the lid and set the instant pot to pressure cook mode for 5 minutes.

Once done, allow natural pressure release for 5 minutes, then manually release the remaining pressure. Open the lid carefully, fluff the rice with a fork, sprinkle garam masala, and garnish with fresh coriander leaves before serving warm.
