Pepper Rice Recipe Ingredients
- 1 cup rice
- 2 teaspoons whole black pepper or coarsely ground pepper.
- 1 Tbsp. ghee or unrefined oil.
- 1 teaspoon cumin seeds
- 1 teaspoon mustard seeds
- 8-10 curry leaves
- 1 medium onion, finely choppe
- 2-3 cloves of garlic, minced
- 1-inch ginger, grated
- 2 T roasted peanuts or cashews (optional)
- 1/2 teaspoon turmeric powder
- Salt to taste
- 2 cups water
- Garnish of fresh coriander leaves.
- Squeezer of lemon juice (option)
In the Pan on the Stove
Preparation
Rinse 1 cup of Keshar Kali rice with a lot of water until the water becomes clear. Pre-soak the rice in water approximately 15-20 minutes, drain and store.
Pound the black pepper roughly with a mortar and pestle to bring out its strong smell. Of the onions, ginger and garlic chop them finely such that they mix well with the rice.
Cook Pepper Rice
Put one pan on medium burner and pour in ghee or oil. Add mustard seeds and cumin seeds after it becomes warm. Splutter and then put some curry leaves and roasted cashews or peanuts.
Add onions and fry them until they are a golden brown. Add ginger and garlic and cook 30 seconds or so until fragrant
At this point, add turmeric powder and crushed black pepper. Blend thoroughly to allow the spices to give out their flavour.
Pour in soaked rice and stir gently to give the rice a coating of spices. Pour water 2 cups and add salt to taste. Mix well and bring to a boil.
Cover and cook the pan in medium heat between 10-12 minutes until the rice is soft and has a fluffy texture. Switch off the stove and leave it to rest in 3-4 minutes.
Lid Open Use a fork to fluff the rice, then add lemon juice or not. Serve with coriander leaf. Your pepper rice is cooked, and it is now ready to serve it with curd, raita or pickle.
Pressure Cooker Method
Wet 1 cup of Keshar Kali rice in approximately 20-30 minutes and shake off. Put ghee or oil in a pressure cooker and add mustard seeds, cumin seeds, curry leaves and nuts.
Add ginger and garlic after sauteing onions until golden. Add turmeric and crushed black pepper, and then soaked rice and salt. Mix everything well.
Add 2 cups of water and seal the lid of the cooker. Simmer over medium heat until it blows out 2 times.
Lid Open the lid, fluff the rice using your finger and thumb, add lemon juice (optional) and sprinkle with leaves of coriander. Served hot with yogurt or salad.
In an Instant Pot
It is prepared in the same way as the pressure cooker.
Turn on saute in the instant pot and warm ghee or oil. Add mustard seeds, cumin seeds, curry leaf, nuts, onion, ginger, garlic, turmeric and crushed pepper one after the other and saute.
This is added to soaked rice, salt, and water. Close the lid and put pressure cook mode to 5 minutes. After cooking, the natural pressure should be released within a couple of minutes and the rest of the pressure should be released by hands.
Use a fork to fluff the rice and have a garnish made of coriander leaves and serve warm.
