Masala Rice Recipe: Step-by-Step Guide

Below is a step-by-step process of cooking delicious masala rice:
  • Step 1: Take a cup of any Keshar Kali rice and wash it well. Soak it in a bowl of water for a few minutes.
  • Step 2: Meanwhile, prepare the vegetables. Wash them and chop them finely.
  • Step 3: Place a deep-bottomed pan on a high flame. Let the pan be heated, and then pour a teaspoon of any cold-pressed edible oil or ghee. Once it gets warmed, add a teaspoon of cumin seeds and let it splutter.
  • Step 4: Add a handful of curry leaves and green chillies.
  • Step 5: Finely chop a medium-sized onion. Add the onion pieces and a teaspoon of ginger garlic paste with salt as per your taste. Saute the mixture till the onion changes to a golden-brown colour.
  • Step 6: Finely chop a small-sized tomato and add to the above mixture. Stir well till the raw smell vanishes and the tomato pieces begin to shrink.
  • Step 7: Now, add ½ a cup of different vegetables such as capsicum, carrots, beans, broccoli, green peas and corn. Stir properly for 2 to 3 minutes.
  • Step 8: Close the lid of your pan and let the vegetables cook for a few minutes. The veggies should be slightly crunchy and spongy and shouldn’t be mushy.
  • Step 9: Open the cover and check if the veggies are properly cooked. If half-cooked, cover it again and let the vegetables cook for another 2 minutes. If cooked, add the following spices and saute well.
    • 1/4 teaspoon of turmeric powder
    • 1 teaspoon of red chilli powder
    • 1/2 a teaspoon each of coriander powder and garam masala powder
  • Step 10: Add 1 cup of cooked rice and stir well. Remember that the cooked rice should be at room temperature. After cooking the rice, spread it on a plate. Let it cool down and come to room temperature before adding the grains to the above mixture.
  • Step 11: Cover the pan and let it cook for a couple of minutes.
  • Step 12: Open the cover and garnish it with a tablespoon of coriander leaves. Mix well, and your delicious masala rice is ready to be served. You top it up with a handful of cashews and peanuts to add more crunchiness to your dish, but that’s optional. You relish the dish with curd, raita, pickles, or chutney.

Expert Rips for Cooking the Masala Rice Recipe

Listed below are some tips that you should keep in mind while following the masala rice recipe and cooking the delicious dish:
  • While stirring rice, keep the flame on low to medium.
  • Adding lemon juice is optional. You can squeeze a lemon to add tanginess.
  • Besides using freshly cooked rice, you can use previously cooked rice to make the dish.
  • Adjust the level of spices according to your taste. You can add more spices if you love extra spicy dishes.
  • If you are in a hurry, you can skip adding the veggies. Adding vegetables makes the dish more balanced, fulfilling, and wholesome.
  • In addition to adding vegetables, you can add paneer, tofu, or mushrooms and add pav bhaji masala powder or red chilli powder for added flavours.
  • Besides adding carrots, green peas, capsicum, and broccoli, you can add other vegetables such as cauliflower or potatoes.
  • Adjust the spices and seasonings according to your taste.
  • As you already know, you should cook the masala rice recipe with cooled rice. Do you know why? Adding hot or warm rice will lead to the breakage of rice grains while stirring, and the end result can be a mushy or lumpy dish. You certainly do not want that, right? That’s why it is advisable to prepare the dish with cooled rice.
