Lemon Rice

Ingredients (Servings: 2)

  • 1 cup cooked rice (Keshar Mahak or Keshar Kali)

  • 2 tbsp fresh lemon juice

  • 1 tbsp oil or ghee

  • ½ tsp mustard seeds

  • 1 tsp urad dal (split black gram)

  • 1 tsp chana dal (optional, for crunch)

  • 1-2 green chilies (slit lengthwise)

  • 1 sprig curry leaves

  • ¼ tsp turmeric powder

  • Salt to taste

  • 1 tbsp roasted peanuts or cashews (optional, for garnish)

  • 1 tbsp chopped coriander leaves (for garnish)

Steps to Prepare Lemon Rice

1. Cook the Rice

Cook 1 cup of rice with 2 cups of water until soft and fluffy. Let it cool slightly and set aside.

2. Prepare the Base

a.Heat oil or ghee in a pan over medium heat.
b. Add mustard seeds and allow them to splutter.
c. Stir in urad dal, chana dal, green chilies, and curry leaves. Sauté until the dals turn golden brown.

3. Flavor the Rice

a. Add turmeric powder and salt to the tempering. Mix well.
b. Pour the tempering over the cooked rice and gently mix until the rice is evenly coated.

4. Add Lemon Juice

a. Turn off the heat and add fresh lemon juice.
b. Mix thoroughly to ensure the lemon flavor is evenly distributed.

5. Garnish and Serve

a. Garnish with roasted peanuts or cashews and fresh coriander leaves.
b. Serve warm or at room temperature with raita, papad, or pickle.
