For Cooking Rice

  • 1 cup of any non-sticky rice – or approximately 4 to 4.5 cups of any cooked rice
  • 1.75 to 2 cups of water

For Tempering

  • 2 tablespoons of ghee or any cold-pressed or wood-pressed edible oil
  • 1 teaspoon of mustard seeds
  • ½ teaspoon of cumin seeds
  • 1 teaspoon finely chopped ginger
  • ½ tablespoon of urad dal (split and husked black gram)
  • ½ tablespoon of chana dal (split and husked Bengal gram)
  • 10 to 12 cashews chopped or 2 tablespoons of chopped cashews or peanuts
  • 1 or 2 broken and deseeded dry red chillies
  • ½ to 1 teaspoon of chopped green chillies or 1 to 2 green chillies
  • 1 pinch asafoetida (hing) – optional, (You can skip asafoetida if you want to enjoy a gluten-free coconut rice dish)
  • 10 to 12 curry leaves
  • 1.5 cups of fresh, finely grated coconut
  • Salt according to your taste

How to Cook Tasty Coconut Rice?

Below is a step-by-step guide on cooking drool-worthy coconut rice:

Step 1: Preparation

  1. Firstly, take a cup of any Keshar Kali rice. Wash that cup of rice properly in water and then soak it for around 20 to 30 minutes.
  2. Meanwhile, take a bowl and add half a tablespoon each of chana and urad dal.
  3. Now, wash these two dals properly and soak them in water just like rice for approximately 20 to 30 minutes. Later, separate the dals from the water and keep them aside. You can add the dals directly without soaking. But soaking enhances the texture of the dals and gives your dish a good taste.

Step 2: Cooking Rice

  1. After 20 to 30 minutes, drain the water and keep the soaked rice on a plate. Now, it’s time to cook rice. You can cook rice in 2 ways, both of which are explained below:
    • In a Pot: Pour 2 cups of water into a deep-bottomed pot and bring the water to a boil. Add the washed rice to the boiling water and close the lid. Allow the rice to cook on a low to medium flame. The cooked rice should be firm.
    • In a Pressure Cooker: You can also cook rice in a pressure cooker. You can cook rice for 2 whistles or 1 whistle with 3/4th cups of water as per your choice.
  2. When rice is totally cooked, fluff it using a fork, spread it on a plate, and allow it to cool.

Step 3: Tempering

  1. Pour 2 tablespoons of ghee or any edible oil of your choice in a pan or kadhai. Let the oil heat on a high flame. Then turn the flame into low, add a spoonful of mustard seeds and let it make a crackling sound.
  2. After the oil is heated properly and the mustard seeds crackle, add ½ tablespoon of urad dal and ½ tablespoon of chana dal. Saute and fry the dals properly for 1 minute.
  3. Add 10 to 12 cashews or 2 tablespoons of chopped cashews as well as peanuts. Fry until the nuts change to a golden colour.
  4. By this time both chana and urad dal will turn golden. Now, add the ingredients mentioned below:
    • ½ teaspoon of cumin seeds
    • 1 teaspoon finely chopped ginger
    • 1 or 2 broken and deseeded dry red chillies
    • ½ to 1 teaspoon of chopped green chillies or 1 to 2 green chillies
    • 10 to 12 curry leaves
  5. Now it is time to fry curry leaves. Saute properly and keep frying until the curry leaves turn crisp and the colour of the red chillies changes.
  6. Pour 2 to 3 tablespoons of water. The water will evaporate and make the dals soft and supple. If you want to soften the dals more, pour another 2 tablespoons of water. When the water evaporates again, a pinch of hing or asafoetida and stir well.

Step 4: Add Coconut and Cook the Ultimate Coconut Rice

  1. Now, add 1.5 cups of fresh, finely grated coconut, and salt according to your taste. If you use frozen coconut, let it come to room temperature, then fry the coconut. If you use fresh coconut, no need to fry it because the heat of the cooking utensil will warm it.
  2. Blend the coconut and spices well. Saute the coconut for approximately 3 to 4 minutes. Keep stirring until the coconut gets a creamish or pale beige colour.
  3. Finally, it’s time to add rice. Add the steamed cooled rice into the mixture and give it a good stir.
  4. Turn off your gas stove and stir well. Your mouth-watering coconut rice is ready. You can garnish your dish with coriander leaves, lemon juice, or ghee. Choose anyone as per your liking and taste. You can serve and enjoy the dish with curries, salads, raita, or curd according to your choice.
