  • 1 cup long-grain rice (Basmati/Sona Masoori)
  • 2 medium brinjals (eggplants), chopped into 1-inch pieces
  • 1 medium onion, thinly sliced
  • 1 medium tomato, chopped
  • 2-3 green chilies, slit
  • Curry leaves, a few sprigs
  • 1-inch piece of ginger, finely chopped
  • 2-3 cloves garlic, minced
  • 2 tablespoons oil or ghee
  • 1 teaspoon cumin seeds (Jeera)
  • 1 teaspoon mustard seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala
  • Salt, to taste
  • 2 cups water
  • Fresh coriander leaves, chopped (for garnish)
  • Optional: 1 tablespoon roasted cashews for garnish 

Steps to Prepare Brinjal Rice:

Step 1: Rinse and Soak Rice

  • Start by rinsing the rice under cold water until it runs clear. Soak the rice in water for 15–20 minutes. This helps the grains cook long, separate, and fluffy. After soaking, drain the rice and set aside.

Step 2: Prepare Brinjals and Spices

  • Wash and chop the brinjals into medium pieces and keep them aside. Chop onion, tomato, green chilies, and ginger-garlic for quick cooking

Step 3: Cooking the Brinjal Masala

  • In a deep pan or pressure cooker, heat 2 tablespoons of oil or ghee over medium heat.

  • Add the soaked and drained rice to the pan with the cooked brinjals. Gently fold the rice into the masala, being careful not to break the grains.
  • Add 2 cups of water and mix lightly. Cover and cook on low-medium heat until the rice is tender and water is absorbed (about 12–15 minutes). If using a pressure cooker, cook for 2 whistles on medium flame and then allow it to rest for 5–10 minutes
