In India, while rice is used in many cuisines and dishes, it can perfectly blend in and give a unique taste to that particular dish by adapting seamlessly, from a biryani to a rice porridge.
Being rich in many nutrients like Vitamins A, C, D, E, magnesium and many more, Keshar Mahak rice can be opted by people who are diabetic and also those who are allergic to certain grains and gluten.
Rinse the rice 3 to 4 times with cold water until the water runs clear.
Bring 2 cups of water to a rolling boil on the stove for every cup of rice, in a pot.
Add the washed and rinsed rice and a pinch(optional) of salt to the boiling water. Reduce heat to low, cover, and simmer for 15-20 minutes or until the water is absorbed and the rice is fluffy and soft in texture.
Once cooked, remove pan from the heat of the stove and let it stand for 5 minutes with the lid on. And finally, fluff the Keshar Mahak rice gently with a fork before serving.
By rinsing the rice grains gently, letting it to soak in a small quantity of water and leaving it to rest for 10 to 15 minutes, ensures maximum puffiness, removing excess starch and preventing stickiness between grains.
To cook rice aptly, it is important to measure the rice and water ratio appropriately. Generally, for perfect doneness of rice, 2 parts of water to 1 part of rice is usually recommended.
By developing a habit to slightly sauté the Keshar Mahak rice with a teaspoon of ghee or oil for 2 minutes before adding the required amount of water, can infuse the rice with a deep and intense flavour and avoid the grains from sticking to each other.
By infusing the rice with flavoured water such as vegetable stalk, lemongrass, mint leaves or a few saffron strands brings in a burst of freshness to your meals.
For a rich and enhanced experience, the cooked rice can be topped with flavourful garnishes like fresh herbs such as cilantro or mint, roasted nuts, fried onions or squeezed lemon with a pinch of salt.
