Pudina Rice: Ingredients

The following are the ingredients you will need to cook mint rice:

For Making the Mint Puree

  • 1 cup of chopped mint leaves
  • ½ cup of chopped coriander leaves
  • 1 to 2 chopped green chillies
  • ½ teaspoon of chopped ginger
  • 3-4 chopped garlic or ½ teaspoon of garlic
  • 1 tablespoon of chopped coconut, 2 tablespoons of grated coconut or coconut milk (You can use anything of the two. You can use 2 tablespoons of desiccated coconut in case you do not have fresh coconut)
  • 1 teaspoon of coriander seeds
  • ½ teaspoon of cumin seeds
  • 2 to 3 tablespoons of water for grinding

Other Ingredients

  • 2 tablespoons of cold-pressed cooking oil
  • 1 cup of any non-sticky rice
  • 2 cloves
  • 2 green cardamoms
  • 1 teaspoon of turmeric as well as red chilli powder
  • 1-inch cinnamon
  • 2-3 strands of mace/javithri
  • 1 small to medium-sized tej patta, also called Indian bay leaf
  • 1 medium-sized onion sliced thinly amounting to ½ cup
  • 1 small sliced tomato
  • 1 small to medium-sized, properly peeled and chopped potato
  • ¼ cup of fresh green peas
  • 1.5 to 2 cups of water
  • Salt according to your taste

The step-by-step rice to cook the delicious mint rice is as follows:

Pressure Cooker

Here is how you can cook pudina rice in a pressure cooker:

Step 1: Preparation

  1. Rinse a cup of any Keshar Kali rice and then soak the washed rice in clean water for at least 20 minutes.
  2. Meanwhile, cut coriander and mint leaves into fine pieces. Also, chop tomatoes, potatoes, garlic, ginger, green chillies, and grate or chop coconut.
  3. Add the following ingredients to the mixer grinder: 1 cup of chopped mint leaves, ½ cup of chopped coriander leaves, 1 to 2 chopped green chillies, ½ teaspoon of chopped ginger, 3-4 pieces of chopped garlic or half a teaspoon of garlic.
  4. Here you can either add grated or chopped coconut or its milk. You can use desiccated coconut if you do not have fresh coconut. Add whichever you find suitable.
  5. Add cumin and coriander seeds as well as 2 to 3 tablespoons of water. Blend the ingredients and make a smooth paste. Add more water if required.

Step 2: Make Pudina Rice

  1. In a pressure cooker, pour 2 tablespoons of cold-pressed cooking oil and add the following ingredients: 1-inch cinnamon, 1 tej patta (Indian bay leaf), 2 green cardamoms, 3 cloves, 2 to 3 single strands of mace. Fry spices on low heat only for some seconds.
  2. Then, add the onions as mentioned in the ingredients list. Saute the mixture till the onions change their colour.
  3. Now, add the pudina puree and a teaspoon of turmeric as well as red chilli powder, Stir the mixture well for a few minutes.
  4. Add 1 small sliced tomato, 1 small to medium-sized, properly peeled and chopped potato and tomato, ¼th cup of fresh green peas, and saute for a few minutes.
  5. Add the washed, rinsed, and soaked rice to the mixture. Stir for a couple of minutes.

Step 3: Cooking Pudina Rice

  1. Add around 2 cups of water and give it a good stir.
  2. Add salt as per your taste and saute well again.
  3. Close your pressure cooker tightly and allow the rice to cook on high heat for 2 to 3 whistles.
  4. Open the cooker and see if the rice grains have turned soft and fluffy. If not, close the lid again and let it cook for another two whistles.
  5. Turn off your gas stove and wait for a few minutes. Let the pressure automatically settle down.
  6. Remove the cover of the pressure cooker and tenderly fluff the cooked pudina rice. Serve the delicious pudina rice with any raita like vegetable raita, onion, tomato raita, boondi raita, etc., or pickles and papads. You can also squeeze lemon juice for adding tanginess to your delicious meal.

Instant Pot

Follow the same preparation method as discussed above in the pressure cooker section. Make the pudina paste as explained above and add the soaked rice to the instant pot. Pour two cups of water and stir well. Let the rice cook well for 5 to 10 minutes. When you open the instant pot cover, you will see a layer of pudina paste and coconut on the top.
