- 2 tablespoon unrefined oil
- Mustard seeds
- Salt to taste

The step-by-step guide to cooking mango rice is as follows:
Using Sliced Mangoes
Step 1: Preparation
- Wash, cut, and discard the skin of the raw mango. Cut the whole fruit into slices and take out the centre pit.
- Wash 2 cups of Keshar Kali rice. Strain the water and fill fresh water in a bowl. Soak rice for a few minutes. Then cook the rice as you usually do. Rice should be completely cooked and soft.
- Put the cooked rice aside and allow it to come to room temperature.
Step 2: Tempering
- Put your pan on your gas stove and pour in about 1 tablespoon of unrefined oil. Heat the oil. Turn your stove to a medium flame and add peanuts. Fry them until they change their colour and release their scent. Place the nuts on a plate and keep them aside for garnishing purposes.
- In the same pan, pour another two tablespoons of oil. Add 1 teaspoon of mustard seeds, chana, and urad dal. Stir them well until they turn golden brown, just like peanuts.
- Then add the following ingredients: green chilies, curry leaves, and dried red chilies. Close the lid quickly, otherwise the oil will splutter and split all over your gas stove. Keeping the pan covered will prevent the ingredients. From getting scattered.
- Finally, add curry leaves, finely sliced ginger, turmeric, and asafoetida, and give the mixture a good mix. Continue until the curry leaves turn crisp.
Step 3: Cooking Mango
- Turn on your stove to a low flame. Now it is time to cook raw mangoes. Add grated raw mango, salt, and turmeric to the above mixture. Sauté the mixture for approximately 2 to 3 minutes.
- Close the lid of your utensil and continue cooking till the shreds turn soft.
- If you see that the fruit has lost moisture before it’s fully cooked, sprinkle or add one teaspoon of water. The mango should be completely cooked and leave the sides of your utensils.
- Add mustard powder. This step is optional, though. You can either add it now or add it later while garnishing.
- Add grated coconut and evenly cut coriander leaves at the end of stirring the fruit.
Step 4: Cooking Mango Rice
- Add and mix cooked mangoes and rice. Taste it and adjust the salt according to your taste.

- Spread the cooked rice on a large plate and cover it. Keep it aside.
- Meanwhile, wash, peel, and cut a big raw mango. In the blender, add cut mangoes with the following:
- 3 to 4 dried red chilies (broken and deseeded)
- 1 chopped green chili or ½ to 1 teaspoon chopped
- 1 teaspoon white sesame seeds
- 2 teaspoons peanuts
- ½ cup grated coconut
- 1 teaspoon powdered or grated jaggery, as per your choice
- Grind all the ingredients well and turn it into a semi-fine puree. Keep this paste aside.
- In a pan, properly roast peanuts and put them aside. Add mustard seeds and till you notice their crackles.
- Then add curry leaves, chilies, turmeric powder, and a pinch of hing and sauté the mixture properly.
- Then add the mango puree. Stir the mixture for around 5 minutes on medium to low heat. The mixture must be thick and bind well.
- Add salt and mix well once again. Turn off the gas and remove your utensil.
- Add the cooked mango paste to your cooked rice. Ensure that the boiled rice is at room temperature when mixing.
