Ingredients (Servings: 2)

  • 1 cup cooked rice

  • 2 tbsp tamarind paste (or soaked tamarind pulp)

  • 1 tbsp oil or ghee

  • ½ tsp mustard seeds

  • 1 tsp urad dal (split black gram)

  • 1 tsp chana dal (optional, for crunch)

  • 2 dried red chilies (broken into pieces)

  • 1 sprig curry leaves

  • ¼ tsp turmeric powder

  • 1 tsp jaggery (optional, for mild sweetness)

  • 1 tsp sesame seeds (roasted and ground, optional)

  • Salt to taste

  • 1 tbsp roasted peanuts (optional, for garnish)

  • 1 tbsp chopped coriander leaves (for garnish)

Steps to Prepare Puliyogare

1. Cook the Rice

Cook 1 cup of rice with 2 cups of water until soft and fluffy. Let it cool slightly and set aside.

2. Prepare the Tamarind Mixture:

a. In a small bowl, mix tamarind paste with 3 tbsp of warm water to dilute it.
b. Add salt, turmeric powder, and jaggery (if using). Stir well and set aside.

3. Prepare the Tempering:

a. Heat oil or ghee in a pan over medium heat.
b. Add mustard seeds and allow them to splutter.
c. Stir in urad dal, chana dal, dried red chilies, and curry leaves. Sauté until the dals turn golden brown.

4. Cook the Tamarind Base:

a. Pour the prepared tamarind mixture into the pan with the tempering.
b. Simmer the mixture on low heat for 3-5 minutes until it thickens slightly.

5. Combine with Rice:

a. Add the tamarind mixture to the cooked rice and gently mix until the rice is evenly coated.
b. Optionally, sprinkle roasted and ground sesame seeds for added aroma.

6. Garnish and Serve:

a. Garnish with roasted peanuts and fresh coriander leaves.
b. Serve warm with papad or curd for a complete meal.
