Jeera Rice Recipie

Ingredients:

  • 1 cup long-grain rice (Prefer Kesar Madhuram for its extra thin, delicate nature)
  • 2 cups water
  • 1 tablespoon ghee or oil
  • 1 teaspoon cumin seeds
  • 1 bay leaf
  • 1 small cinnamon stick
  • 2-3 green cardamom pods
  • 1-2 cloves
  • 2 green chilies, slit
  • Salt to taste
  • Chopped fresh coriander leaves for garnish

Instructions:

  1.  Take one cup of rice and rinse it until the water runs clear to remove excess starch.
  2.  Soak the rice for 10-15 minutes for better texture, then drain it.
  3.  Heat ghee or oil in a pressure cooker pot over medium heat. Once hot, add jeera/cumin seeds and let them splutter.
  4.  Add the bay leaf, cinnamon stick, cardamom and cloves. Stir for a few seconds to release their aroma.
  5.  Add green chilies and sauté it.
  6.  Add the soaked rice and mix gently for 2-3 minutes until the rice is lightly coated with ghee/oil.
  7.  Add 2 cups of water and salt. Stir well, cover with a tight lid and cook the rice on low heat for three whistles.
  8.  Turn off the heat and let the rice rest for 5 minutes before opening the lid.
  9.  Once the pressure is completely released from the cooker open the lid.
  10.  Gently fluff the rice with a fork and mix. Garnish it with finely chopped fresh coriander leaves.
  11.  Serve hot with your favorite veg or non-veg curry or a simple dal.

2. Restaurant-Style Jeera Rice

Restaurant-style Jeera Rice has a delicate texture. It is usually prepared with cooked rice. It often uses whole spices and sometimes a touch of jeera powder to add depth to the flavors.

Ingredients:

  • 2 cups of steamed rice (Prefer Basmati or Kesar Madhuram)
  • 1 tablespoon ghee or oil
  • 1 teaspoon jeera/cumin seeds
  • 1 bay leaf
  • 1 small cinnamon stick
  • 2-3 green cardamom pods
  • 1-2 cloves
  • 1 medium onion, thinly sliced
  • 2-3 green chilies, slit
  • Salt to taste
  • Fresh coriander leaves, chopped (for garnish)

Instructions:

  1.  In a pan, heat 1 tablespoon of ghee (or oil) over medium heat. Once hot, add the jeera/cumin seeds and let them splutter for a few seconds.
  2.  Add whole spices such as bay leaf, cinnamon stick, cardamom and cloves. Stir for few seconds to release aromatic flavors.
  3.  Add the green chilies (slit or chopped) and sauté for another 1-2 minutes.
  4.  Then add the sliced onions and sauté for 3-4 minutes, until they become softer.
  5.  Add hot steamed rice to the pan. Mix gently so that the rice gets evenly mixed with the tadka.
  6.  Add salt to taste and stir well, making sure the rice is evenly seasoned.
  7.  Cook for 2-3 minutes on medium heat, allowing the rice to absorb the flavors.
  8.  Garnish it with freshly chopped coriander leaves and serve hot with any curry/dal.
