- 1 cup rice
- 1 cup fresh or frozen green peas (3/4 to 1 cup).
- 1 Tbsp. ghee or unrefined oil.
- 1 teaspoon cumin seeds
- 1 bay leaf
- 2 green cardamoms
- 1-inch cinnamon stick
- 4-5 cloves
- 1 medium onion, thinly sliced
- 2 green chillies, cut (not compulsory)
- 1 teaspoon ginger-garlic paste.
- Salt to taste
- 2 cups water
- Garnish Fresh coriander or mint leaves.
- Lemon juice (some)
In the Pan on the Stove
Preparation
Wash 1 cup of Keshar Kali rice until the water becomes clear. Wet the rice in water approximately 15-20 min then drain and reserve.
Rinse the green peas when using fresh peas. Thinly slice onions then make ginger-garlic paste such that the flavours blend in the cooking process.
Cook Peas Pulao
Put a pan on medium heat and add Ghee or oil. When hot add cumin seed, bay leaves, cloves, cinnamon and cardamom. Let the spices to shed the aroma.
Add onions sliced and sauté until light golden. Add green chillies and ginger-garlic paste and cook approximately 30 seconds and fragrant.
Add green peas and stir one minute. Add rice that has been soaked and stir gently to ensure that the grains are coated with spices.
Add water 2 cups, and add salt to taste. Boil and then cover and cook on medium heat within 10-12 minutes until the rice is soft and fluffy.
Switch the stove off and allow it to cool down to 3-4 minutes. Lid: Open the lid, fluff the rice using a fork and add lemon juice (if required) and lemon juice and coriander or mint leaf (as garnish).
Your aromatic peas pulao is prepared and is to be served with curd, raita or pickle.
Pressure Cooker Method
Wet 1 cup of Keshar Kali rice in 20-30 minutes and drain it. Add cumin seeds and whole spices to heatghee/oil in a pressure cooker.
Onions are to be sautéed until golden, and then green chillies, ginger-garlic paste are to be added. Add green peas, moistened rice, salt, and 2 cups water stirring thoroughly.
Cover the lid with a close and cook on medium fire 2 whistles. Let the pressure be discharged.
Add lemon juice, open the lid, rip the rice and garnish it with coriander or mint leaves. Accompanied by hot yogurt or salad.
In an Instant Pot
Prepare in the same way as pressure cooker.
Turn on saute on the instant pot and warm ghee or oil. Add entire spices, onions, ginger-garlic paste, chillies, and peas, and saute them.
Stir in soaked rice, salt and water. Close the lid and turn pressure cook mode on 5 minutes. Ensure that natural pressure is released after cooking and that the rest of the pressure is released by hand.
Rice should be fluffed with a fork and topped with fresh herbs and served warm.
